Red Bean / White Mushroom Drink

 

 

BENEFITS:

This drink helps protect the lungs, helps the liver, pancreas congestion and assists bowel movements. It also helps take the acidic heat out of the system assisting swelling in the body to go down.

 

Serves: 2

 

Ingredients:

  • 1 cup mung beans
  • ½ cup adzuki beans
  • 1 cup kelp
  • 1 cup white mushrooms

 

Preparation

  1. Cover with water and soak the mung and adzuki beans for 24 hours, rinse and drain
  2. Cover with water and soak the kelp and white mushrooms for 6 hours, rinse and drain
  3. Put everything into a large pot with a gallon of water and boil for 10 minutes
  4. Turn off the heat and let cool
  5. Put all the ingredients into a blender and blend till fully mixed (add water to make it more liquid-like)
  6. Put the mixture into a container and put into the refrigerator
  7. You can add a little honey or brown sugar to your taste if you wish

 

You can also warm up the drink each morning if you like

The mixture will last a week — there is enough for two people to each enjoy a small bowl every morning. This is a perfect drink for the transition from summer into fall!
